Redesign food to improve health value - opportunities and limits

The aim of WP 2 is to develop new hedonic food with an improved health value and high consumer acceptance and diet concepts for defined stages of life. This WP includes the identification and specification of consumer needs and the administration of highly-skilled sensory panels as well as the sensory attractiveness ("good taste") of the newly generated food. The focus hereby lies on popular "convenience" food like hamburger or pizza. WP 2 will be conducted in close collaborations with the industry partners, involving the competences of food technology, food chemistry, nutrition science, consumer research and socio-economic diversity in food choices thus creating an outstanding platform for interdisciplinary development and testing of food.
